Ingredients:
(4) 1⁄2 pound halibut fillets
2 tablespoons lemon juice
1 teaspoon dill weed
1 tablespoon olive oil
1 teaspoon salt
1⁄2 teaspoon pepper
Directions:
1) Preheat oven to 350.
2) Coat bottom of a shallow baking dish with olive oil. Lay fillets in the dish.
3) Sprinkle fillets with salt, pepper, dill weed and drizzle lemon juice.
4) Cover and heat for 20 minutes.

Mashed Sweet Taters:
Ingredients:
2 medium sweet potatoes, peeled
2 tbsp. butter
2 tbsp. maple syrup
2 c. water
1⁄2 tsp. salt
Directions:
1) Peel the potatoes and cut them into 1inch squares.
2) Bring water to boil.
3) Add potatoes and boil until the potatoes are soft. Drain.
4) In a bowl, add boiled potatoes, butter, salt, and maple syrup.
5) Blend well to mash using an electric mixer or a spoon.
Sauteed Spinach:
Ingredients:
1 bag of fresh spinach
1⁄2 c. water
2 tsp. lemon juice
1⁄2 tsp. sesame oil
1⁄2 tsp. salt
Directions:
1) Bring water to a boil. 2) Add the rest of the ingredients and sauté until wilted.
