Ingredients:
1 pound turkey breast, ground
1 ½ teaspoons olive oil
½ cup celery, chopped
½ cup onion, chopped
½ cup green pepper, chopped
1 cloves garlic
14.5 oz can chicken broth, low sodium
2 cups elbow macaroni
14.5 oz. diced tomatoes, undrained
½ tablespoon vinegar
¾ teaspoon sugar
½ teaspoon chili powder
1 teaspoon salt
2 tablespoons grated parmesan cheese
1 tablespoon parsley
** Serve with apple slices
4 medium sized apples, sliced
Directions:
In a skillet, heat the oil and brown the ground turkey breast. Add the celery, onion, garlic, and green pepper and cook until the vegetables are tender. Keep warm.
In a saucepan, pour chicken broth and bring to a boil. Add the macaroni and cook for 8 minutes. Next, stir in the diced tomatoes, parmesan cheese, vinegar, sugar, chili powder, and salt. Stir together and pour tomato mixture into skillet with turkey mixture. Stir and simmer for 10 minutes.
