Ingredients:
1 rotisserie chicken, diced and skinless
1 cup quinoa, rinsed and drained
2 cups chicken broth
2 tablespoons basil pesto
1 tomato, diced
salt and pepper to taste
Directions:
Bring the quinoa and chicken broth to a boil in a saucepan. Cover and reduce the heat and simmer for 15 minutes. Remove from heat. Stir in the pesto. Add the tomato and the rotisserie chicken. Salt and pepper to taste.
