Gluten Free WITHOUT couscous
Ingredients:
2 tablespoons olive oil
1 pound chicken breast, boneless and skinless, 4 halves
14.5 ounces petite diced tomatoes, undrained
½ cup black olives, sliced
1 teaspoon grated lemon peel
**Serve with Couscous
one box couscous
Directions:
Trim chicken breast halves of any fat. Heat oil in a skillet over medium high heat. Cook the chicken in the oil about 5 minutes or until brown, turning once.
Stir in the remaining ingredients and heat to boiling. Reduce heat, cover and simmer 15-20 minutes.
**For couscous: follow directions on box.
