Chicken Tortilla Soup- Recipe 4 (Prep time: 15 min, Cook time: 40 min)
Gluten Free recipe with Swanson Natural Goodness Chicken Broth and Tostito’s Chips
Ingredients:
8 ounces chicken breast, boneless, skinless tenders
8 cups chicken broth (Swanson’s Natural Goodness for GF)
¾ cup tortilla chips, crushed (Tostitos for GF)
1 cup onion, chopped
1 cup green pepper, chopped
1 clove garlic, minced
2 cups fresh tomato, chopped
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon salt
1 cup Monterey jack cheese, shredded
**Serve with side salad
1 bag Spring Mix lettuce
1 pint cherry tomatoes
olive oil
salt
Directions:
Slice the chicken tenders into 1 inch pieces. Sauté chicken, onions, garlic and peppers until onions are translucent. Add all of the spices and continue cooking 30 seconds. Add tomatoes and continue cooking 2 minutes. Add crushed tortilla chips. Add 8 cups of chicken broth, bring to a boil. Reduce heat to simmer for 30 minutes. Garnish with shredded Monterey Jack cheese.
**Serve with a side salad: spring mix, cherry tomatoes, olive oil and salt.
