Gluten Free
Ingredients:
1 pound ground beef, 4% fat
1 package taco seasoning mix
15 oz can kernel corn, drained
15 oz can black beans, undrained
6 oz can Del Monte tomato paste
1 ½ cups water
½ cup sour cream
2-8 oz packages of cheddar cheese, shredded
**serve with side salad
bag of sweet butter blend lettuce
pint cherry tomatoes
sliced mushrooms
olive oil
salt
Directions:
In a large skillet over medium heat, sauté the ground beef and drain the fat. Add the taco seasoning, stir and reduce the heat to low. Cook and simmer for 10 minutes. In a large dutch oven on low heat, combine the corn, beans, tomato paste and water and mix well. Add the seasoned meat and the sour cream. Bring to a slow boil and then reduce heat to simmer for 20 minutes. Add cheddar cheese with serving.
**For salad: Mix all ingredients and toss with olive oil to coat.
